Ingredients for 4 servings:

  • 1 celeriac
  • 1 lemon(s)
  • 2 eggs
  • e.g. breadcrumbs
  • salt and pepper
  • e.g. olive oil

super easy without pre-cooking

Peel the celery and cut into slices about 1 cm thick (using a good knife or bread slicer). Season with salt and pepper, and let stand for a while. Meanwhile, whisk the egg and season generously with salt and pepper. Dip the celery in the egg, coat it in breadcrumbs, and fry in a pan over medium heat for about 5 minutes per side, depending on its thickness. Don’t overcook it. The crust should be a lovely golden yellow and the celery should be soft. Drain the schnitzels on kitchen paper and serve with a slice of lemon. These schnitzels taste perfect with a squeeze of lemon! An inexpensive, simple, and delicious recipe. It’s also very healthy if you use high-quality vegetable oil. Although I love meat, I don’t miss it at all in these schnitzels.
