Celery Schnitzel with Mashed Sweet Potatoes and Prawn Tails

The perfect celery schnitzel with mashed sweet potatoes and prawn tails recipe with a picture and simple step-by-step instructions.

Celery schnitzel:

  • 2 Slices of celery approx. 1 cm thick / approx. 200 g each
  • 1 tsp Salt
  • 3 tbsp Flour
  • 1 Egg + 1 tbsp cooking cream
  • 6 tbsp Breadcrumbs
  • 6 tbsp Sunflower oil
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill

Mashed sweet potatoes:

  • 300 g Sweet potatoes
  • 200 ml Chicken broth (1 teaspoon instant)
  • 1 tsp Salt
  • 1 tbsp Butter
  • 1 tbsp Cooking cream
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill

Shrimp tails:

  • 1 pack Prawn tails 225 g / TK
  • 2 Garlic cloves
  • 2 tbsp Sweet soy sauce
  • 2 tbsp Olive oil
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill

To serve:

  • Baked the rest of the breadcrumbs
  • 2 Stalk Dill

Celery schnitzel:

  1. 2 Cut slices of celery (approx. 1 cm thick / approx. 200 g each) from a large celery tuber, boil in salted water (1 teaspoon salt) for about 3 minutes, remove, let cool a little, bread (flour, beaten egg + Cream and breadcrumbs) and fry in a pan with sunflower oil (6 tbsp) on both sides until golden-brown. take out and season with salt and pepper. Fry the remaining breaded egg, cut in half and roll up.

Mashed sweet potatoes:

  1. Peel and dice sweet potatoes, cook in chicken broth (200 ml / 1 teaspoon instant) with 1 salt (1 teaspoon) for about 20 minutes, drain through a kitchen sieve, return to the hot saucepan and top with butter (1 teaspoon), cooking cream ( 1 tbsp), salt (2 big pinches), pepper (2 big pinches) and nutmeg (1 pinch) season / refine and work through / mash thoroughly with the potato masher.

Shrimp tails:

  1. Thaw the shrimp tails in good time, marinate with sweet soy sauce (2 tbsp), olive oil (2 tbsp) and garlic cloves crushed with the garlic press (2 pieces) for about 20 minutes. Put in a pan and fry until golden-brown on both sides. If too much liquid forms, skim it off. Season with salt and pepper.

Serve:

  1. Serve sweet potato puree on celery schnitzel with prawn tails, garnished with the breaded egg and sprig of dill.
