Celery Schnitzel – a celery recipe for gourmets
Enjoy the classic schnitzel without any meat. It tastes delicious and very spicy.
- Ingredients (serves 4): 2 stalks of celery, 3 eggs, 5 tablespoons milk, salt, nutmeg, breadcrumbs, flour, and fat for frying
- Peel the celery and then cut it into about 1cm thick slices and boil them in salted water for five minutes. Let cool down.
- Mix the eggs with milk, salt, and nutmeg.
- Coat the salted celery slices in flour, then dip them in the egg mixture and finally in the breadcrumbs.
- Fry the escalopes in hot oil until golden brown.
- It goes well with potato salad or lettuce.
- Tip: mix the breadcrumbs with sesame seeds. That tastes even better.
Celery salad with walnuts and apples
The salad is easy to prepare ahead of time and tastes even better the next day. Ideal for the office.
- Ingredients (4 servings): 1 celeriac, 80g walnuts, 3 tart apples, 3 tbsp mayonnaise, salt, sugar, pepper
- Cut the apples and celery into fine sticks – preferably with a food processor.
- Blanch the celery in boiling salted water for 2 minutes.
- Roughly chop the walnuts.
- Mix together apples, celery, nuts, and mayonnaise. Season the salad with salt, pepper, and a pinch of sugar.
Hearty Celery Carrot Bolognese
This vegetarian variant of the Bolognese tastes particularly delicious with wholemeal pasta.
- Ingredients (4 servings): 4 carrots, 1/2 celery root, 1 onion, 2 cloves of garlic, 2 canned tomatoes, salt, pepper, basil, olive oil
- Peel celery, onion, garlic, and carrot. Cut into small pieces in the food processor.
- Fry the vegetables in olive oil and pour the tomatoes over them.
- Season the sauce with the spices and let it simmer.
Celery Apple Soup
This celery recipe is also suitable with bread as a side dish as a main meal.
- Ingredients (serves 4): 2 tart apples, 1 celery root, 50ml white wine, 250ml cream, 1 onion, 1 stock cube, lemon juice, salt, pepper, nutmeg, butter
- Peel onion, apples, and celery. Roughly chop all three ingredients.
- Sauté the celery with apple and onion in butter and deglaze the vegetables with white wine and water.
- Add the spices, stock cube, and lemon juice.
- Cook everything until the celery is soft and then puree the vegetables.
- Stir in the cream and season if necessary.
Spicy Celery Potato Pancakes
Celery gives crispy potato pancakes a particularly spicy aroma.
- Ingredients (serves 4): 600g potatoes, 1 medium-sized celery root, 1 apple, 1 egg, 2-3 tbsp cornstarch, salt, caraway, nutmeg, oil
- Peel the vegetables and the apple and grate everything finely.
- Squeeze the potatoes and mix the grated ingredients with the egg, cornstarch, and spices.
- Fry tablespoon-sized portions of the mixture until golden brown.
