Ingredients for 1 servings:
- 4 large carrots
- 2 large onions
- 1 can of baked beans in tomato sauce
- 1 can of tomatoes, chopped
- curry powder
- Paprika powder
- salt and pepper
- some olive oil
- ½ bell pepper(s), green, for some color
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours
Vegetable relish from South Africa
Chop the onions and cook them slowly in a large pan with a little olive oil; do not fry. Add 1 teaspoon of curry powder, or more if desired. Continue cooking the onions. Peel and coarsely grate the carrots and add them to the onions. Cut the green pepper into small pieces and add them. Cook the mixture for about 15 minutes, until the grated carrots are soft. Then add the beans and stir everything gently. Add the canned tomatoes and cook for 5 minutes. Then reduce the heat to low. Add salt, pepper, and paprika to taste. The chakalaka should now be given enough time to continue simmering on low heat. The typically spicy flavor will usually be well absorbed after 1-1/2 hours, and the South African vegetable relish is ready. Chakalaka is a good accompaniment to milie pap or is often used at a braai (barbecue).
