Salmon trout from the oven

Ingredients for 4 servings:

  • 1 fish (salmon trout, approx. 1.3 kg)
  • 4 cloves garlic
  • 6 tbsp olive oil
  • 2 tbsp thyme, dried or 1 pot fresh herb
  • 2 tbsp dill
  • 2 lemon(s), untreated
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the trout thoroughly, then pat dry. Score the skin several times and drizzle with lemon juice and season with salt and pepper. Next, finely chop the dill, press the garlic, and zest the second lemon, then squeeze the lemon. Mix the herbs (dill and thyme) with the olive oil, lemon juice, and lemon zest and let it sit for a while. Then fill the cuts in the fish with this mixture. Place the fish on a baking sheet lined with aluminum foil (lightly oil the foil beforehand) and cook in an oven preheated to 180°C (350°F) for about 35 minutes. Serve with boiled potatoes and a lemon-butter sauce.
