Ingredients for 4 servings:

  • 750 g chard
  • 2 cloves garlic, cut into wafer-thin slices
  • 6 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 2 tsp mustard
  • Salt
  • 1 pinch(s) of sugar
  • Pepper, freshly ground

Clean and wash the chard, remove the stems in a V shape, and set the leaves aside. Cut the stems into pieces, cook in boiling salted water for about 15 minutes, then remove from the water. Wash the chard leaves, add them to the boiling vegetable water, blanch briefly, drain, rinse with cold water, and roughly chop. Mix the stems and chopped leaves with the garlic slices and the salad dressing ingredients. Let them marinate well (at least 30 minutes). Serve on plates. Garnish with desired garnish (e.g., shaved Parmesan or Pecorino, diced tomatoes, or red bell peppers). Use as a snack or as a light dinner.
