Fanta cake with mandarin sour cream

Ingredients for 1 servings:

  • 5 eggs
  • 300 g sugar
  • 1 packet of vanilla sugar
  • 350 g flour
  • 1 packet of baking powder
  • 125 ml oil, neutral
  • 175 ml Fanta
  • Grease for the tray
  • 3 can/n tangerines
  • 600 g whipped cream
  • 5 packs of vanilla sugar
  • 3 packs of cream stiffener
  • 500 g sour cream
  • possibly cinnamon sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 55 minutes

Beat the eggs, sugar, and vanilla sugar until frothy. Mix the flour and baking powder and stir in. Add the oil and Fanta and stir in. Grease a baking tray and spread the batter evenly. Bake in a preheated oven at 150°C (fan oven) for 25 minutes. Let the cake cool. Drain the mandarins. Whip the cream until stiff peaks form, gradually adding 3 sachets of vanilla sugar and the cream stabilizer. Mix the sour cream with 2 sachets of vanilla sugar. Fold in the mandarins and lightly fold in the cream. Spread the cream evenly over the cake. Refrigerate until the sour cream and mandarin orange mixture is firm. Sprinkle with cinnamon sugar, if desired.
