Cheddar Garlic Cookies

Ingredients for 1 servings:

  • 200 g Cheddar cheese
  • 280 g wheat flour type 405
  • ½ pack of baking powder
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 large garlic cloves
  • 110 g butter, melted
  • 180 g buttermilk
  • 50 g butter, soft
  • 1 tbsp, heaped parsley, finely chopped
  • ½ tsp Pul Biber
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 25 minutes

Cut the Cheddar cheese into thick strips and place in the freezer for about 45 minutes. It will be easier to grate then. Sift the flour with the baking powder and mix with the sugar and salt. Press the garlic through a garlic press and mix with the buttermilk. Add the buttermilk and butter to the flour and mix with a wooden spoon to form a dough. Coarsely grate the chilled cheese using a food processor and knead it into the dough. From the finished dough, separate 25 equal-sized balls, flatten them slightly, and place them on a baking sheet lined with parchment paper. Preheat the oven to 220°C (top/bottom heat) and bake the cookies for about 18-20 minutes. Let the cookies cool slightly on a wire rack. For the herb butter, mix the softened butter with the parsley, Pul Biber, and salt and brush it onto the cookies.
