Cheeks: Cuddly Balls
The perfect cheeks: cuddly balls recipe with a picture and simple step-by-step instructions.
The batter is enough for 18 muffin tins
- 150 g Sugar
- 3 piece Eggs from Hilde’s daughters
- 150 g Butter
- 300 g Flour
- 0,5 packet Baking powder
- 80 ml Blood orange juice from Valensina or freshly squeezed
the filling is enough for a dessert, or you can just use half
- 400 ml Milk
- 3 piece Organic egg yolks
- 50 g Sugar
- 1 packet Vanilla sugar
- 60 g Potato flour
- 200 g Butter
- Bitter orange jam * or a red jelly
- 3 drops Orange aroma
the coat
- 50 g Butter
- 75 g Grated almonds
- 100 g Chopped almonds
- 50 g Oat flakes tender as flowers
- 100 g Sugar
- 1 tablespoon Orange sugar *
the dough
- Mix the butter with sugar and eggs until foamy, add flour and baking powder and knead. Now pour in enough orange juice to make a thick batter.
- Grease and crumble the muffin tins and fill in the batter (half full) and bake the muffin at 170 degrees air circulation for about 30 minutes. (Examination with wooden toothpicks). If they have risen too high – as with me – then put a board on it and complain.
- Take the muffins out of the molds and let them cool completely. Hide, because there are thieves everywhere !!!
the filling
- Remove three tablespoons of the milk and stir in the potato flour until smooth. Heat the rest.
- Mix egg yolks with sugar and vanilla sugar until frothy. Now carefully add this cream to the milk, which must not boil under any circumstances. Add the stirred up cornstarch and heat until the pudding has formed.
- Let the pudding cool, then mix with the soft butter and orange flavor and put in the fridge.
- If the cream does not set, you can bind it with gelatine.
- Now cut through the muffin twice and spread jam or jelly on the two lower slices. Then add a teaspoon of the cream. Put the muffins back together. Also cover the outside of the parts with cream
the coat
- Heat the butter in a pan, add the sugar and the remaining ingredients and brown while stirring constantly.
- Put the filled muffins in the pan with the mixed brittle and cover with it.
- Chill until ready to serve.
- After the amounts of filling and brittle were calculated very generously, I poured the leftovers together and had a great dessert for the evening. If you don’t want that, just take half of the fullness and coat. ;-))))
