Cheese and Beer Soup

Ingredients for 4 servings:

  • 3 cloves garlic
  • 125 g mountain cheese, mature
  • 50 g clarified butter
  • 1 tbsp flour
  • 500 ml meat broth
  • 500 ml milk
  • 250 ml beer, light
  • n. B. Salt
  • n. B. Pepper, from the mill
  • e.g. cream
  • e.g. wild garlic or chives

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Bavarian style

Preparation: Finely chop the garlic and grate the cheese. Directions: Heat the clarified butter. Add the garlic and sauté with the flour. While stirring, pour in the meat broth. Bring to a boil briefly. Add the milk and beer and heat well. Do not boil! Stir in the cheese until it has melted. Season the soup with salt and pepper. Finish with cream. Garnish the finished soup with chopped leek.
