Ingredients for 1 servings:

  • 90 g flour (whole grain)
  • 100 g flour (white flour)
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 3 tbsp onion(s), finely chopped
  • ¼ tsp garlic powder
  • 125 g cheese, spicy, grated
  • 60 ml oil (corn oil or sunflower oil)
  • 240 g buttermilk
  • 50 g grated cheese, for sprinkling
  • ½ tsp salt
  • possibly grease for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

makes 12 pieces

Preheat the oven to 180°C. Grease a muffin tin or line it with paper baking cups. In a medium bowl, thoroughly combine the dry ingredients—flour, baking powder, baking soda, salt, spices, onion, and seasoned cheese. In another bowl, break the egg and beat lightly. Add the oil and buttermilk and mix well. Finally, add the dry ingredients and fold gently until moistened. Fill the batter 3/4 full into the muffin tin and sprinkle each with a little grated cheese. Place in the hot oven and bake on the middle rack for about 20-25 minutes.
