Ingredients for 4 servings:
- 600 g potatoes
- 100 g cheese, grated
- 2 eggs
- salt and pepper
- nutmeg
- 250 g oyster mushrooms
- Clarified butter or oil for frying
- 1 cup herb cream cheese
- some cocktail tomatoes
- some cress

also delicious as a warm starter
Peel and coarsely grate the potatoes. Mix with grated cheese, eggs, salt, pepper, and nutmeg. Fry small rösti in hot fat and keep warm. Grate the oyster mushrooms lightly and slice them freshly, fry them on both sides in the remaining fat, and spread them on the rösti. Place a small teaspoon of cream cheese, tomato quarters, and some cress on the mushroom rösti and serve. A delicious vegetarian main course or a smaller batch as a warm appetizer.
