Ingredients for 10 servings:

  • 1 kg ham sausage, preferably sliced ​​by the butcher, alternatively mortadella, Lyoner etc.
  • 1 kg Edam cheese, sliced
  • 5 m.-sized onion(s)
  • 700 g gherkins
  • 350 ml cucumber juice
  • 50 ml water
  • 5 tbsp table vinegar, 5%
  • 3 tbsp mustard, medium hot
  • 5 tbsp sugar
  • some marjoram
  • some nutmeg
  • some caraway

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes

Bavarian style

Boil the pickle juice, water, vinegar, mustard and spices to a broth. Cut the cheese slices at least into quarters lengthways, then cut them individually or on top of each other, either into diamond shapes (alternating left and right edges) or leaves (right and right edges). Also quarter the ham sausage at least lengthways and cut into diamond shapes or leaves. Slice the gherkins lengthways into medium-fine slices. Wash and peel the onions, then quarter and also slice medium-finely. Mix the cheese and sausage diamonds with the sliced ​​gherkins and onions. Then stir in the broth and let the salad stand for at least 1 hour. Fried potatoes go wonderfully with this.
