Cheese and spinach spaetzle

Ingredients for 4 servings:

  • 750 g spaetzle, fresh
  • salt water
  • 2 small onions
  • 2 tbsp butter
  • 400 g leaf spinach (frozen)
  • 100 g cooked ham
  • 200 g cheese, grated
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cook the spaetzle in salted water for 1-2 minutes. Drain and set aside to absorb any excess fat. Finely chop the onions. Heat the butter and sauté the onions until translucent. Add the frozen spinach, cover, and let thaw over medium heat for about 10 minutes. Season with salt, pepper, and nutmeg. Cut the ham into small pieces and mix with the spinach, spaetzle, and 2/3 of the cheese. Place everything in a baking dish and sprinkle with the remaining cheese. Bake in a preheated oven at 220°C for about 10 minutes. Tip: If you can’t find fresh spaetzle, you can also use 400g of dried ones and cook them. I always use young, chopped spinach, as it spreads better.
