Ingredients for 2 servings:

  • 60 g butter, soft
  • 2 small eggs
  • 2 tbsp vegetable broth, granulated
  • 1 tsp, leveled herb salt
  • 1 tsp, leveled nutmeg
  • 1 tsp, leveled curry
  • 100 g wheat flour (wholemeal)
  • 30 g cheese, grated
  • 30 g hazelnuts, ground
  • 1 liter vegetable broth
  • some parsley
  • lovage
  • chives
  • e.g. Parmesan or breadcrumbs

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Original side dish, at the buffet or as a vegetarian dish!

Mix together the butter, eggs, vegetable stock granules, and seasonings until smooth. Add the finely grated hazelnuts, grated hard cheese, and whole wheat flour, and refrigerate the dough for 30 minutes. Then, form the dough into small balls and place them in 1 liter of hot vegetable stock. Cover and simmer gently for 15-20 minutes. Carefully remove from the pan, sprinkle with chopped herbs, and serve. Tip: Roll the finished balls in breadcrumbs or Parmesan cheese.
