for the sauce
- 3 Spring onions
- 1 handful Leaf parsley
- 2 tbsp Sunflower oil
- 50 g Grated Emmental
- 200 g Mixed minced meat
- 1 Egg
- Salt and pepper
- 80 ml White wine dry
- 2 tbsp Creme fraiche Cheese
- 1 tsp Soy sauce
- 1 tbsp Sherry dry
- White milled pepper

- Soak the rolls and squeeze them out. Clean the spring onions and cut into rings. Wash and finely chop the parsley. Heat 1 tablespoon of oil in a pan and sauté the spring onions and parsley. Put aside.
- Put the minced meat with the cheese, egg and onion mixture in a bowl and work thoroughly. Season with salt and pepper. Shape the mixture into 4 meatballs. Heat the remaining oil in a pan and fry the meatballs on both sides. Take out and keep warm.
- For the sauce, simmer the frying stock with the wine. Stir in the crème fraîche and reduce until creamy. Season with sherry, soy sauce and pepper. At the same time, fry the rösti and serve the salad on the plates. Finally, arrange the meatballs and rösti on the plates and pour the sauce over them.
