Indian Style Pumpkin Soup

The perfect indian style pumpkin soup recipe with a picture and simple step-by-step instructions.

  • 1 Diced Hokkaido pumpkin
  • 2 medium-sized Diced carrots
  • 1 Asian garlic bulb
  • 5 cm Fresh ginger
  • 1 tbsp English style curry powder
  • 2 small Diced onion
  • 0,5 tsp Ground white pepper
  • 1000 ml Organic vegetable broth
  • 0,25 tsp Cinnamon
  • 1 tsp Salt
  • 150 ml Cream or coconut milk
  • 1 Bay leaf
  • 2 tbsp Butter
  1. Wash, core and dice the pumpkin. Also cut the onions and garlic into small cubes.
  2. Drain the butter in a saucepan and sauté the onions and garlic in it. Add the pumpkin, ginger and carrot. Also sauté. Deglaze with the broth and simmer with the bay leaf for about 25 minutes.
  3. Remove the bay leaf and puree with a blender. Add the cream or coconut milk, add all the spices, mix well again and add a little more liquid if necessary.
