Cheese Cake Franco – Suisse
The perfect cheese cake franco – suisse recipe with a picture and simple step-by-step instructions.
The dough :
- 150 g Spelled flour
- 150 g White flour
- Salt and pepper pinch of sugar
- 10 g Yeast fresh
- 1,5 dl Lukewarm water
- 60 g Extra virgin olive oil
- Origano thyme rubbed
The filling:
- 200 g Schwyzer mountain cheese mild
- 300 g Alsatian Munster cheese
- 130 g Cantadou with pepper mix
The cast:
- 3 Pc. Free range eggs
- 2 dl Cream 10% fat
- 2 dl Low-Fat milk
- Nutmeg and caraway seeds
- Pepper or salt
- For a 29 cm baking tray.
The dough :
- Sift both types of flour together into the bowl of the cake machine, add salt and pepper. Attach in the middle of a recess. Dissolve the yeast with water, add a pinch of sugar, wait until it foams (approx. 15-20 minutes) in the depression, add the oil and mix everything together. Cover with a damp cloth in a warm place and double-rise.
- Grease and flour the cake tray. Knead the dough quickly, roll out, cover the tray tightly with a fork. Let rest in the refrigerator for about 20-30 minutes.
Fill cake:
- Coarsely grate the mountain cheese. Cut the Munster cheese into slices. Spread the cantadou on the cake base, spread the Munster cheese on top, and the Schwyzer Bergkäse on top.
The cast:
- Whisk eggs with cream and milk with salt (be careful with salt, I may have written, I didn’t take any). Season with pepper and nutmeg, everyone can give caraway as much as he likes (it applies to all spices). Pour the topping slowly onto the cake.
To bake :
- approx. 45-50 minutes on the bottom groove of the oven preheated to 180 ° C. Take out and let cool for a moment, take out of the tray, place on a cake board, cut portions. Serve on slightly warmed plates with a salad. We had a cabbage salad.
- Enjoy your meal …. enjoy it. Of course, one or two glasses of Riesling or Sylvaner are part of it, cheers …… Yes one more thing, I would not recommend eating these cakes for dinner if you want to sleep well. I needed a few glasses of digestif to digest.
