Cheese – cornmeal – muffins

Ingredients for 12 servings:

  • 100 g flour
  • 1 tsp baking powder, maybe a little more
  • 1 pinch of salt
  • 70 g corn flour (fine polenta)
  • 6 tbsp cheese, spicy, grated
  • 30 g corn kernels, from the can
  • 2 eggs, whisked
  • 5 tbsp milk
  • 4 tbsp oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 180°C. Grease the muffin tin. Combine sifted flour, baking powder, and salt in a bowl. Add cornflour, cheese, and corn kernels, and make a well in the center. Pour a mixture of eggs, milk, and oil onto the dry ingredients. Mix quickly with a wooden spoon; do not overmix. Pour the batter into the prepared tin and bake for 20 minutes, until the muffins have risen and are golden brown. Remove from the tin immediately and serve warm.
