Ingredients for 4 servings:

  • 2 cups flour
  • 4 eggs
  • 400 g cheese (spaetzle cheese)
  • Salt
  • 2 onions
  • butter
  • Water

Vorarlberg specialty

Knead flour, eggs, salt, and water into a smooth dough (be careful, it’s sticky!). The size of the cup is a standard coffee cup, i.e. 125 ml. The amount of flour can vary depending on the size of the eggs. Bring water to a boil in a pot and add salt. Press the dough into the boiling water using a spaetzle grater. The tougher the dough, the larger/longer the dumplings will be. When the spaetzle float to the top, they’re done. Remove and place in an ovenproof dish and sprinkle with spaetzle cheese. Repeat this process until all the dough and cheese are used up. Pour 1-2 ladlefuls of the spaetzle water over the spaetzle and cheese, then place in an oven preheated to 200°C (400°F) until the cheese has melted. Serve with buttered onion rings until browned!
