Simple egg dumplings in the housewife style

Ingredients for 4 servings:

  • 3 eggs
  • 250 ml milk
  • 3 tbsp vegetable oil
  • 250 g flour, smooth
  • 2 tbsp butter
  • 2 pinches of nutmeg
  • Salt
  • chives

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Bring salted water to a boil in a large pot. Whisk one egg with salt, nutmeg, milk, and oil. Stir in the flour with a wooden spoon until no lumps remain. Using two small spoons, quickly scoop out small dumplings from the dough and drop them into the boiling water. The dumplings will expand as they cook. As they float to the top, they are ready. Drain and rinse with cold water if desired. Crack the remaining eggs, season with salt, and whisk well. Heat the butter in a pan and toss the dumplings in it. Pour the eggs over the dumplings and let them set. Serve with chives. This goes particularly well with a green salad marinated in a simple oil and vinegar sauce.
