Cheese eggs

Ingredients for 6 servings:

  • 6 medium-sized eggs, hard-boiled
  • 3 tbsp cheese, Gouda or Manchego, grated
  • 1 tbsp mayonnaise
  • 2 tbsp chives, freshly chopped
  • 1 red chili pepper(s), finely chopped
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Let the hard-boiled eggs cool, peel them, and halve them lengthwise. Carefully remove the yolks and strain them through a fine sieve into a bowl. Add the cheese, mayonnaise, chives, and chili and mix well. Season with salt and pepper to taste. Fill the egg white halves with the mixture, arrange on plates, and refrigerate until ready to serve.
