Ingredients for 4 servings:

  • 6 eggs, hard boiled
  • 1 tsp parsley, chopped
  • 1 tsp onion(s), chopped
  • 80 g ham, cut into small pieces
  • 55 g mayonnaise
  • salt and pepper
  • 100 g nuts (pecans or macadamia nuts), chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Finely chop or mince the eggs. Add the parsley, onions, ham, and mayonnaise, and mix everything together. Season to taste. Form into 24 balls. Roll them in the chopped nuts and let them stand in the refrigerator for an hour. Then serve. Note: Depending on your taste, you can use cooked, air-dried, or smoked ham. The same applies to nuts: try before you buy. Caution! If using salted nuts, season the egg mixture very carefully with salt.
