Cheese pralines

Ingredients for 1 servings:

  • 400 g cream cheese, made from sheep’s milk
  • 60 g butter, salted (room temperature)
  • 80 g cheese, finely grated Pecorino
  • 50 ml cream, fresh
  • 2 sheets of white gelatin
  • some white pepper, freshly ground
  • some salt
  • n. B. Herbs, fresh (e.g. sage, rosemary, flat parsley, thyme) OR:
  • Paprika flakes
  • e.g. dates, chopped dried apricots or walnuts

Instructions

Working time approx. 30 minutes; Rest time approx. 15 minutes; Total time approx. 45 minutes

Cheese pralines with sheep’s cheese, makes about 20 pieces

Thoroughly mix the cream cheese, butter, and pecorino with salt and pepper. Soften the gelatin in cold water, squeeze out the excess water, and warm it with the cream. Dissolve the gelatin in the water, remove from the heat, and stir it into the cheese mixture. Let it set slightly (about 15 minutes) and immediately form into small balls. Roll them in chopped walnuts, herbs, chopped dates, dried apricot pieces, or red pepper flakes, depending on your taste. These cheese pralines are a great snack for a wine-drinking evening and a great addition to any cheese platter.
