Ingredients for 1 servings:
- 2 packs of puff pastry
- 20 g butter
- 1 egg yolk, mixed with a little water
- 2 eggs, for the filling
- 400 g feta cheese, coarsely crumbled, for the filling
- 200 g mozzarella (buffalo), coarsely crumbled, for the filling
- 4 garlic cloves, squeezed
- 6 sprigs of mint, roughly chopped, or dill or parsley
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Khatschap’uri made from puff pastry – very simple – with great effect – tastes hot and cold
Preheat oven to 180°C fan/convection oven. Process the cheese with the eggs, garlic cloves, and desired herbs in a food processor for 30 seconds. Place baking paper on a baking tray and place one sheet of dough on top. Spread the filling evenly over the filling. Leave a border of approximately 1 cm on all four sides. Carefully place the second sheet of dough over the filling. Press the top and bottom edges of the dough together firmly, then fold upwards once and press to create a firm edge that will not open in the oven. Brush the top evenly with the egg yolk/water mixture, pierce several times with a fork, and bake in a preheated oven at 180°C for approximately 20 minutes. When the top is well browned, remove from the oven and brush with butter. Cut the khachap’uri into portions and serve hot, warm, or cold (room temperature). This dish is easy to prepare and simply needs to be placed in the oven when guests arrive. The original recipe doesn’t call for herbs in the filling. Although some people might find it hard to imagine, cheese combined with mint tastes sensational. That’s assuming, of course, that you like mint.
