Ingredients for 1 servings:

  • 400 g flour
  • 1 packet of baking powder
  • 2 tbsp margarine
  • 4 eggs, separated
  • ½ tsp salt
  • 2 tbsp sugar
  • Milk
  • 350 g cheese (Gouda), grated
  • Chili powder (Ají rojo), red, hot

Working time approx. 30 minutes; Total time approx. 30 minutes

Bolivian pastry: Spicy cheese roll

Knead the flour, baking powder, margarine, three egg yolks (reserve one for brushing), salt, and sugar into a dough. Add a little milk if desired. For the filling, beat the four egg whites until stiff. Fold in the grated cheese and season with red aji (or hot chili powder) to taste. Roll out the dough to about 4 mm thick, spread the filling on it, and roll it up on both sides. Brush with the remaining egg yolk and sprinkle with a little aji (or chili) and a pinch of sugar. Bake in a preheated oven at medium heat (approximately 170°C) for about 20-30 minutes. The cheese roll tastes best warm. Tip: You can of course use other cheeses instead of Gouda. I’ve also seen this recipe mixed with Gouda and feta cheese. As far as I know, in Bolivia they use a salty sheep’s cheese that’s a bit creamier than feta cheese.
