Ingredients for 10 servings:

  • 250 g flour (type 550)
  • 175 g flour (type 1050)
  • 1 packet of yeast (dry yeast)
  • 1 tsp sugar
  • 1 tsp salt
  • 250 ml water, lukewarm
  • 200 g cheese, coarsely grated
  • 1 egg yolk
  • 1 tbsp water

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes

Combine both types of flour with the yeast in a mixing bowl and mix. Add the sugar, salt, and water and knead everything into a smooth dough using the dough hook of a hand mixer for about 5 minutes. Finally, knead in about 150g of grated cheese. Cover the dough and let it rise until it has visibly increased in size (about 30 minutes). Then knead the dough briefly again by hand and form about 10 oval rolls. Place these on a baking tray lined with baking paper and let rise for another 30 minutes. Mix the egg yolk with the water and brush the rolls with it. Then sprinkle with the remaining cheese and bake at 180°C – 200°C for about 25 minutes.
