Ingredients for 1 servings:

  • 1 kg flour
  • 400 g cheese, grated, preferably Emmentaler or to taste
  • 800 ml water, warm
  • 4 tsp, heaped salt
  • 2 tsp, heaped sugar
  • 2 packets of dry yeast
  • 200 g grated cheese, for sprinkling
  • 2 medium-sized egg yolks for brushing

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 55 minutes

In a large bowl, combine flour, grated Emmental cheese, and salt. Then add warm water, sugar, and dry yeast. Mix everything thoroughly and let it rise for about 2 hours. Form the dough into rolls and place them on a baking sheet lined with parchment paper. Whisk the egg yolk and brush the rolls with it. Sprinkle the rolls with cheese. Bake the rolls in a preheated oven at 225°C (top/bottom heat) for about 20-30 minutes.
