Cheese salad with pears and hazelnuts

Ingredients for 4 servings:

  • 400 g Tilsiter
  • 2 pears, ripe
  • 50 g hazelnuts, whole
  • 4 handfuls of lettuce, e.g. Lollo Rosso or red lettuce
  • 2 tbsp lemon juice
  • 4 tbsp white wine
  • 1 tbsp balsamic vinegar, white
  • 1 tbsp mustard, Dijon
  • 2 tbsp mayonnaise
  • 4 tbsp crème fraîche
  • 1 bunch of chives
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the lettuce leaves and set aside. Remove the rind from the Tilsiter cheese and cut into thin slices. Peel and quarter the pear, remove the core, slice, and toss with the lemon juice. Brown the hazelnuts in a dry pan. Place them on a cloth and rub until the skins come off. Then roughly chop the nuts. Make a creamy sauce with the wine, vinegar, mustard, mayonnaise, crème fraîche, salt, and pepper. Finely chop the chives and add them. Carefully toss the Tilsiter cheese and pears with the sauce. Arrange the lettuce leaves on the plates, arrange the pear and cheese salad on top, and finally sprinkle with the hazelnuts.
