Shrimp baked with feta cheese

Ingredients for 4 servings:

  • 750 g prawns, raw, peeled and deveined
  • Salt
  • Black pepper, freshly ground
  • 4 tbsp olive oil
  • 6 spring onions, freshly chopped
  • 4 cloves garlic, finely chopped
  • 1 pinch(s) of cayenne pepper
  • 400 ml tomato(s), strained
  • 250 g feta cheese, crumbled
  • 1 bunch of flat-leaf parsley, finely chopped
  • Sugar

a quick and tasty starter

Preheat the oven to 220 degrees Celsius (425 degrees Fahrenheit). Sprinkle the shrimp with salt and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp and cook for 3 minutes, stirring constantly. Then remove the shrimp with a slotted spoon. In the same skillet, heat the remaining 2 tablespoons of olive oil, add the spring onion, and sauté for about 8 minutes, until softened. Add the garlic and cayenne pepper and sauté for another 2 minutes. Add the tomatoes and cook for about 2-3 minutes, until the mixture thickens slightly. Add a pinch of sugar and season with salt and pepper. Spread the sauce evenly over the shrimp in a baking dish and crumble the feta cheese over the top. Bake in the oven until the cheese melts (5-8 minutes). Sprinkle with parsley and serve hot. Serve with ciabatta or baguette.
