Cheese schnitzel

Ingredients for 4 servings:

  • 250 g grated cheese, e.g. Emmental or Gouda
  • 150 g natural yogurt
  • 2 eggs
  • ¼ tsp salt
  • 5 tbsp, heaped flour
  • e.g. breadcrumbs
  • Fat or oil for frying

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Mix the cheese, yogurt, and eggs in a bowl with a fork, stirring in the flour. Place plenty of breadcrumbs on a plate. One after the other, form flat schnitzels from the cheese mixture, place them on the breadcrumbs, and press down lightly to ensure they stick. Since the schnitzels are difficult to turn, sprinkle the top side with breadcrumbs and press down lightly. Heat some fat in a pan and, using a spatula, slide the schnitzels into the pan one at a time. After about 3-5 minutes, carefully turn the schnitzel over and cook on the other side. Since uncooked schnitzels are very unstable, they should either be stored on a smooth surface or placed in the hot fat immediately after breading.
