Cheese spaetzle

Ingredients for 4 servings:

  • 300 g flour
  • 3 eggs
  • Salt
  • 250 g bacon, streaky
  • 200 g onion(s)
  • 200 g Emmental cheese
  • pepper
  • Fat for the mold
  • 1 bunch of parsley

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Mix together flour, eggs, a little salt, and about 250 ml of cold water. Let the dough rest for 20 minutes. Cut the bacon into small cubes. Peel the onions and dice them as well. Sauté both in a pan. Coarsely grate the cheese. Place the spaetzle dough from a damp board or using a spaetzle grater into boiling salted water and simmer until they rise to the top. Drain and refresh with cold water. Layer the spaetzle with bacon and onions, cheese, salt, and pepper in a greased baking dish. Bake in the oven at 200°C for about 30-40 minutes. Rinse the parsley, shake dry, and finely chop. Sprinkle over the spaetzle before serving.
