Cheese spaetzle (creamy and spicy)

Ingredients for 5 servings:

  • 1 kg spaetzle
  • 150 g cheese (Old Amsterdam)
  • 180 g Cheddar cheese
  • 1 bunch of spring onions
  • 1 ½ cup(s) milk
  • some butter
  • Pepper, freshly ground

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with spring onions, simple, without cream, without oven dish

Finely slice the spring onions and some of the green parts. Grate the cheese. Set the spring onion greens and cheese aside. Sauté the onions in butter, add the spaetzle, and heat through. Now add 1-2 handfuls of cheese and a little milk to the spaetzle, mix, and cover until the cheese has melted. Stir frequently. Reduce the heat! Repeat until all the cheese and milk are used up. Finally, add the spring onion greens and pepper and mix. If desired, add something for garnish! Serve immediately! Variations: add cooked and smoked ham and/or various herbs.
