Cheese: Spicy Cheese Balls on Fruity Sauce

The balls

  • 100 g Brie 70% F.i.Tr.
  • 100 g Romadur
  • 0,5 tablespoon Processed cheese
  • 1 piece Fresh onion
  • 0,5 teaspoon Red chilli flakes
  • 1 pinch Salt
  • 1 pinch Black pepper from the mill
  • Breadcrumbs
  • Fat for frying

The sauce

  • 1 tablespoon Currant jelly*
  • 1 tablespoon Hoi Sin Sauce
  • 2 tablespoon Cream 30% fat
  • 2 tablespoon Arugula or lettuce leaves

The balls

  1. Peel the onion and puree with the magic wand together with the three cheeses.
  2. Season with chilli flakes, pepper and salt to taste and add enough breadcrumbs to make a malleable dough.
  3. Form small balls with damp hands, roll them in breadcrumbs and place in the freezer for two hours.
  4. Heat the fat in a deep fryer or saucepan and bake the frozen balls at 170 degrees for about 30 seconds until they are golden yellow.

the sauce

  1. Mix the currant jelly, hoi sin sauce and cream together and then strain through a sieve.
  2. Place the rabbit food on a plate, arrange the fried balls on top and surround with the sauce.
