Ingredients for 1 servings:

  • 125 g flour
  • 90 g butter, cold, diced
  • 1 egg yolk
  • 125 g Parmesan, grated
  • Salt and pepper, to taste
  • 1 egg(s)
  • 2 tbsp Parmesan, grated for sprinkling

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Using a mixer or food processor, knead the flour, butter, egg yolk, and cheese with salt and pepper until you have a firm dough. Remove from the oven and knead by hand until you have a smooth dough. Roll out the dough on a floured surface to a thickness of 0.5 cm and cut into strips approximately 7 cm long and 1 cm wide. Place the strips of dough on a board and refrigerate for 30 minutes. Place them 1 cm apart on a baking sheet lined with baking paper. Brush the sticks with the egg and sprinkle with Parmesan cheese. Bake in an oven preheated to 180°C for approximately 15 minutes until golden brown. Serve warm or cold. The sticks are easy to make ahead and store in an airtight container. Simply crisp them up at 200°C for 3 minutes.
