Ingredients for 4 servings:

  • 1 pack of puff pastry, fresh or frozen
  • 3 eggs
  • 300 g white cheese (Fromage Blanc, e.g. Nico 20% fat)
  • 2 tbsp crème fraîche
  • 150 g cheese (Gruyère or Emmental), grated
  • salt and pepper
  • nutmeg
  • Fat for the mold
  • Flour for the mold

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cheese tart

Grease and flour a tart pan. Roll out the puff pastry in it. Preheat the oven to 220°C. Mix all ingredients well (I always start by whisking the eggs) and pour it onto the dough. Then bake in the oven for about 20 minutes (note: middle rack, not all the way up, as the eggs will cause the dough to rise quite a bit!). It’s so simple, but I’ve already received a lot of praise for it. It tastes great with a leaf salad and is so quick!
