Ingredients for 3 servings:
- 450 g flour
- 4 eggs
- 1 tsp salt
- 1 pinch(s) of sugar
- 150 ml milk
- 150 ml water, lukewarm
- 150 g cheese, grated
- 150 g ham, finely diced ham
- 2 small onions
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Place the flour, eggs, salt, and sugar in a mixing bowl and mix with a dough hook until a dough forms. Mix the water/milk and add to the dough as needed. The dough should be viscous (if you hold the bowl at an angle, it should flow slowly, similar to spaetzle dough). The dough should taste a little too salty, otherwise the spaetzle will taste bland. Mix in the grated cheese. Let the dough rest until the water boils (add a good amount of salt to the water). Using a teaspoon, drop the dough into the boiling water in portions (not too many at once, about 10). Cook until the spaetzle rise to the surface. Skim off the excess fat and place in a sieve. Heat oil in a pan and fry the spaetzle. After turning the spaetzle for the first time, add the ham, then the finely diced onions. When the onions are translucent and the spaetzle are golden yellow, enjoy.
