Ingredients for 1 servings:

  • 400 g flour (tapioca flour)
  • ⅛ liter of water
  • 6 tbsp oil
  • 1 tsp salt
  • 2 eggs
  • 150 g Parmesan, fresh

Pao de Queijo are small, baked cheese balls. The recipe originates from Brazil, and the tapioca flour can be found in large supermarkets in the deli aisle or in Asian grocery stores. You can also use polyvilho flour. First, boil water with oil and salt. Place the tapioca flour in a bowl and add the warm water and oil mixture. Mix the dough well. Then add 2 eggs (4 eggs for polyvilho flour) and finally knead in the freshly grated Parmesan cheese. The dough will be quite sticky and firm. Form the dough into pao de queijo (small cheese balls). Place them on a baking sheet lined with parchment paper. Bake in a preheated oven at approximately 200°C on the middle rack for about 20-25 minutes. The pao de queijo should not brown, but should remain light and soft. They taste best warm from the oven with a glass of wine, beer or, of course, a glass of Caipirinha.
