Cheesecake – Brownie

Ingredients for 1 servings:

  • 60 g butter
  • 200 g sugar
  • 3 eggs
  • 40 g flour
  • 1 pinch of salt
  • 6 tbsp cocoa
  • 50 g nuts (macadamia nuts), roughly chopped
  • 250 g quark (low-fat quark)
  • 1 tsp cornstarch
  • 200 g blueberries

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Beat the butter, 100g sugar, and a pinch of salt with a mixer for 5 minutes until fluffy. Add the 2 eggs (they must be at room temperature), one at a time, to the batter. Sift the flour and cocoa powder over the buttercream and mix everything well. Put 2 tablespoons of the mixture into a separate bowl and set aside. In a new bowl, beat the quark, 1 egg, 100g sugar, and the cornstarch until fluffy. Carefully fold in the blueberries. Pour the cocoa powder into a springform pan lined with baking paper (you’ll need a bit of patience, as the batter is very tough) and spread the quark and berry mixture on top. Finally, drop the reserved batter in small dollops onto the quark mixture and bake in a preheated oven at 180°C for 35-40 minutes. Let it cool completely.
