Cheesecake with Buttermilk

The perfect cheesecake with buttermilk recipe with a picture and simple step-by-step instructions.

  • For the dough:
  • 250 g Flour
  • 0,5 packet Baking powder
  • 1 packet Lemon zest
  • 75 g Sugar
  • 150 g Cold butter
  • 1 Egg
  • 1 pinch Salt
  • For the crowd:
  • 350 g Mandarin oranges
  • 4 Eggs
  • 100 g Sugar
  • 500 g Curd cheese 20%
  • 500 g Buttermilk
  • 2 packet Vanilla pudding
  • 1 pinch Salt
  1. Pour the mandarins into a colander and drain. Separate the eggs and set the egg whites aside.
  2. Mix the flour with the baking powder and place in a mixing bowl. Add butter, sugar, lemon zest, egg and a pinch of salt and make a shortcrust pastry. Shape the dough into a ball, wrap in foil and refrigerate for about 30 minutes.
  3. Mix the quark and sugar well in a bowl. Add the egg yolks and stir in. Mix in the vanilla pudding and buttermilk in two servings. Beat the egg white with the pinch of salt until stiff and fold in. Finally fold in the tangerines.
  4. Pour the dough into the prepared springform pan and pull up an approx. 4 cm high rim. Now pour the mixture onto the dough. Place the cake in the (fan-assisted) oven preheated to 175 degrees and bake for approx. 55-60 minutes. If the cake gets too dark, cover with aluminum foil for the last 20 minutes.
  5. When the baking time is over, take the cake out of the oven. Let the cake cool in the tin for 20 minutes, remove the edge of the springform pan and let it cool down.
