Cheesecake with Plums and Sprinkles
The perfect cheesecake with plums and sprinkles recipe with a picture and simple step-by-step instructions.
- For the dough:
- 300 g Flour
- 150 g Sugar white
- 1 Egg
- 175 g Cold butter
- 50 g Oatmeal
- 1 pinch Salt
- For covering:
- 500 g Quark lean
- 250 g Mascarpone
- Juice of half a lemon
- 3 Eggs
- 100 g Sugar white
- 1 packet Custard powder
- 750 g Fresh plums
- In a mixing bowl, work the flour, sugar, egg, salt and the cold butter into a kneading dough. Halve the dough and knead one half with the oat flakes. Shape each dough into a ball and place in the refrigerator for about 30 minutes.
- Wash the plums, cut them in half and remove the stone.
- For the topping, mix the quark, mascarpone, sugar and lemon juice in a mixing bowl until smooth. One after the other, stir in the eggs and pudding powder. Place the half of the dough without flakes on the bottom of the prepared springform pan, roll out and pull up an approx. 3 – 4 cm high edge.
- Spread the cheese mixture on the dough and smooth it out. Spread the prune halves over the mixture. Spread the dough half with the oat flakes on the plums as a crumble.
- Now place the cake in the (fan-assisted) oven preheated to 150 degrees and bake for approx. 55 – 60 minutes. After the baking time, let the cake cool in the tin. If you want, you can sprinkle the cake with powdered sugar before serving.
