Ingredients for 5 servings:

  • 2 packs of Parmesan
  • 6 bunches of parsley
  • 6 bunch chives
  • 6 oranges
  • 1 ½ lemon(s), juice
  • 2 tbsp olive oil
  • salt and pepper
  • 3 tbsp pumpkin seeds
  • 60 prawns (12 per serving)
  • Butter for frying
  • Balsamic vinegar

Working time approx. 25 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 29 minutes

For the Parmesan shells, grate the Parmesan cheese. Form six flat, large circles each on a baking sheet. Bake in a preheated oven at 250°C for about 2-4 minutes, until the cheese is lightly browned. Straight from the oven, invert the Parmesan circles over an upturned coffee cup to create a bowl shape. For the salad, finely chop the parsley and chives. Fillet the oranges. Mix the lemon juice with olive oil, salt, and pepper to make a dressing. Pour the dressing over the chopped herbs and orange segments. Toast the pumpkin seeds in a pan. Fry the prawns in butter until translucent. To serve, fill the Parmesan shells with the herb and orange salad. Place the fried prawns on the salad. Finally, drizzle with a little balsamic vinegar and sprinkle with pumpkin seeds.
