Garlic – chili – shrimp on mango – coriander – raw vegetables

Ingredients for 6 servings:

  • 1 mango(s), not too ripe
  • 1 sprig(s) coriander leaves, fresh, chopped
  • 1 chili pepper(s), very finely chopped
  • 24 shrimp(s), peeled
  • 2 clove(s) garlic, coarsely chopped
  • 1 chili pepper(s), finely chopped
  • 3 tbsp sesame oil

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the mango and cut into cubes with a maximum edge length of 0.5 mm. Mix in the chopped coriander and finely chopped chili pepper. Cover and set aside. Heat the garlic and finely chopped chili pepper together with the sesame oil. The oil should have a strong flavor. Thread two shrimp onto each skewer and fry in the chili-garlic oil. Don’t overcook, or they’ll become tough. Place 3-4 tablespoons of the raw mango onto a plate and place two shrimp skewers on each. If you like, serve with Asian chili-garlic sauce for dipping.
