Cherry clafoutis

Ingredients for 5 servings:

  • 100 g flour
  • 4 eggs
  • 90 g sugar
  • 1 pinch of salt
  • 250 ml milk
  • 750 g cherries, possibly black cherries, pitted
  • Fat for the mold
  • Sugar or powdered sugar for dusting

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Sweet dish or dessert made from pancake batter and cherries

Wash and pit the cherries. Mix the flour with the eggs, sugar, and salt. Add a little of the milk and mix again until the batter is light and fluffy. Gradually add the rest of the milk, then add the cherries. Pour the batter into a greased tart or quiche dish (ideally 25-30 cm in diameter). Bake in a preheated oven at 200°C for about 35 minutes. Dust with sugar or powdered sugar. Serve hot, lukewarm, or cold. Tip: This also works with cherries from a jar. Drain well, though.
