Chia coconut pudding

Ingredients for 1 servings:

  • 1 ½ tbsp seeds (chia seeds)
  • 200 ml milk, plant-based (rice-coconut drink)
  • 100 g strawberries or other fruit

Instructions

Working time approx. 5 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 5 minutes

Stir the chia seeds into the rice and coconut milk and let it soak overnight. Depending on the amount of liquid, the pudding will be either watery or thicker. Serve the strawberries or other fruits with the chia pudding to taste. The sweetness of the rice and coconut milk means no additional sugar is needed. If it’s not sweet enough, you can add honey or syrup to taste.
