Ingredients for 1 servings:
- 200 g dates
- 125 g walnut kernels
- 2 tbsp cranberries
- 2 tbsp chia seeds
- 2 tbsp water
- 1 tbsp honey
- Desiccated coconut
- Almonds, ground
- sesame
Instructions
Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes
A super light snack with natural sweetness for in between meals, no baking required. Approx. 20 bars
Cut the dates into pieces and finely chop in a blender. Add the walnuts and finely chop. Knead/blend the date-nut mixture with cranberries, chia seeds, honey, and water until stiff. Pour the finished mixture into a shallow dish, about 2 cm thick. Place the dish in the freezer for about an hour. Then cut the mixture into bars. If that doesn’t work, form small balls (makes about 20-25) and roll them in desiccated coconut, ground almonds, sesame seeds, or something else. To store, store the bars or balls in a sealable container in the refrigerator. Note: The bars/balls aren’t very sweet—very pleasant for me! They’re high in calories and a good respite for tired minds. They’re also high in protein.
