Chia pudding with apples and cinnamon

Ingredients for 2 servings:

  • 1 cup coconut milk
  • 1 cup applesauce, or 2 small apples
  • 2 small apples
  • 3 tbsp chia seeds
  • 1 tsp cinnamon, to taste
  • ½ tsp nutmeg
  • e.g. vanilla sugar

Instructions

Working time approx. 5 minutes; Rest time approx. 30 minutes; Total time approx. 35 minutes

Stir everything together vigorously, either with a blender, an immersion blender, or just like that. If you don’t have applesauce, first puree 2-3 small apples and then use it as applesauce. Let the pudding sit for 30 minutes, preferably in the refrigerator, so the chia seeds can expand and a pudding-like consistency forms. Stir a few times. Then you can garnish it with nuts and/or apples, or eat it as is. It’s really filling, so this recipe makes enough for 2-3 servings. By the way, I pureed fresh apples. You can see the oxidation in the picture, but I don’t think it affects the flavor.
