Chicken and apricot casserole

Ingredients for 4 servings:

  • 12 chicken drumsticks
  • 1 onion(s)
  • 150 g lean smoked ham
  • 150 g apricot(s), dried, soft
  • 150 ml white wine, dry or
  • Broth, thin
  • 2 tbsp parsley, flat, chopped
  • 1 tbsp vegetable oil
  • salt and pepper
  • n. B. Oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat a little oil in a large pot. Season the chicken thighs sparingly with salt and pepper and sear on all sides. Slice the onions and sear briefly over reduced heat. Dice the ham, quarter the apricots, and add both. Stir everything together, then pour in the wine. Cover and simmer for 20-25 minutes. Add the parsley 5 minutes before the end of the cooking time. Serve with bulgur or rice cooked in broth and a green salad. Whole chicken thighs can be used instead of drumsticks (one per person). In this case, the simmering time will need to be extended by 10 minutes.
