American Style
For the dressing, thoroughly mix the mayonnaise, ketchup, and spring onions. Butter the four slices of toast on both sides. Place the chicken on two slices of toast. Spread half of the dressing on top, scatter the avocado and tomatoes on top, and then top with the remaining dressing. Now place two slices of cheese on top, cover with the other slices of bread, and press them down lightly. Heat the remaining butter in a large frying pan until it sizzles. Add both sandwiches and cook for 2-3 minutes on each buttered side, until golden brown and the cheese begins to melt. Serve with salted potato chips, if desired.
