Chicken and chili bean casserole

Ingredients for 4 servings:

  • 500 g chicken breast fillet(s)
  • 4 tbsp oil
  • 2 medium-sized onions, diced
  • 2 red bell peppers, diced
  • ½ tsp thyme, dried
  • 2 cans of beans (chili beans)
  • 1 cup crème fraîche
  • 200 g cheese, grated
  • Salt
  • pepper
  • Paprika powder, hot
  • 4 tbsp sauce (salsa), if necessary

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the chicken breast fillets, dry them, and cut them into strips. Season with salt and pepper and fry them in hot oil in a pan. Briefly fry the diced onions. Add the diced red bell pepper and fry them briefly. Then add the chili beans with the sauce and crème fraîche, stir well, and let it simmer slightly. Season to taste with salt, pepper, and paprika. If you want the casserole a bit spicier, add salsa sauce. Now place everything in an oiled casserole dish, sprinkle with grated cheese, and bake in a preheated oven at 200°C for about 20-30 minutes. Serve with French fries, white bread, and a fresh salad. For a party, simply serve with tortilla chips.
